Cooking With Amy ~ Tex-Mex Sour Cream Chicken Enchiladas

My family loves this recipe... Sour Cream Chicken Enchiladas are so good. We cannot find this dish at any Mexican restaurant in Virginia. We are originally from Texas and this dish is everywhere. It is really good, so try it, YOU will not be disappointed. (The very end of the video is crappy. Sorry. Our good camera died.) Also, I wrote all the ingredients down that I ended up using ( scroll down) ... so go with that. ANY questions about my recipes, email me   Love You Guys.... ALL Our Followers.....

I never measure anything so after testing this recipe while cooking it, this is my final assessment...

Melt over medium heat

1 1/2 sticks of butter
4 minced cloves of garlic ( for only 30 seconds) then...

1/4 c. plus 2 Tbsp. flour

- whisk to make a roux

3 c. of chicken stock
salt-n-pepper to taste

let reduce down on medium heat 'till gone by half (about 10-15 min.)

Turn down to low heat

3 c. Sour cream
1 Tbsp. cumin
1 Tbsp. chili powder
2 c. Monterrey Jack cheese

Still simmer for another ten minutes on low
Ladle over rolled chicken enchiladas

Add 2 c. of left over Monterrey Jack cheese all over top of enchiladas

  1. Oh my gosh! I've actually been looking all over for a good enchilada recipe! Thank you! :)

    (P. S. I love that Flys song at the end)

  2. I live in a place where Mexican restaurants are few and far between. I usually end up cooking it at home at least once a week. I cannot wait to try this recipe out on my family. Thank you!!!

  3. @ Amanda Thank you for your comment. Try this recipe and email me with your thoughts. I love The Flys!

@ Pamela My family loves Mexican food too. I have to cook it all the time to satisfy their cravings. Hope you enjoy it :)

  4. +JMJ+

    Okay, now I'm drooling all over my keyboard . . . =P

I'll definitely try the sour cream sauce the next time I make enchiladas. =) (I usually make them with a tomato-based sauce, which my family likes, but I'm up for a change--especially one that sounds as delicious as this one is!)

  5. Wow, I've actually tried this before, my mom also knows this recipe and they're DELICIOUS! I'm hungry now.

  6. Chiming back in to say.... Guess what's for dinner tonight? SO excited!

  7. Can you see that I'm obsessed with this? These were fabulous and I just had to post the recipe over on my blog and credit you:
