Cooking With Amy... Italian Meatballs!!!




My Italian Meatballs....

Meatballs:

1 lb. Ground Chuck
1 lb. Ground Mild/Sweet Italian Sausage
1 lb. Ground Spicy Italian Sausage
3 TBS. salt
2TBS. pepper
3 stick of butter
1/4 cup olive oil
2 TBS. of bacon fat
4 large eggs
2-3 cups of Italian seasoned bread crumbs
1 large onion minced
1 cup of any kind of mushroom
10 cloves of garlic minced (SERIOUSLY)
1/2 cup fresh Basil
1/2 cup fresh Parsley
1/2cup fresh Pecorino Cheese
1/4 cup dried onion
2 TBS. of dried red pepper
4 TBS. of dried oregano  

~Add to hot pan, 1 stick butter, olive oil, and bacon fat... melt down.  Add the onions, mushroom to pan, sweat down on medium... after about five minutes, add garlic. Cook for another 60 seconds (don't burn garlic) take off heat and let cool.  After cooled down add to meat mixture with all other ingredients.... roll meatballs, MIX WELL! WITH BOTH HANDS!

~ Add a little olive oil to puree the Basil and Parsley or chop on your own , add to meatball mixture.

~ Roll all meatballs in a bowl of breadcrumbs

~ MAKE ONE small MEATBALL to test/taste for seasoning

when all is good...

~ Brown the meatballs with  butter/olive oil (2 sticks butter-1/4cup olive oil)

When done, set aside.


The Sauce:

PUREE:

2 Onions
6 carrots
4 celery sticks
1 green Bell Pepper

Saute' all the above ingredients

for about 6 minutes in 1 stick butter/1/4 cup olive oil mixture. After you saute' all of that add a bottle of any kind of red wine and reduce down A LOT! After add...

ADD :

pureed (8 garlic gloves)
a handful of Basil
dash Crushed Red Pepper
salt and pepper to taste
3-4 large cans of pureed tomatoes
1 LB. fresh tomatoes (pureed)
 2 small cans of tomato paste


then add meatballs... cook for 1-2 hours on low, all the juices from the meatballs will soak into the sauce (very bubbly) serve over mashed potatoes or spaghetti noodles. Serve with salad and Garlic Bread.

  2. Loved this video. I was actually looking at the glass thinking, what's he drinking? and then LOL ed when you said, "that's coke right? heheehe. I must say you have awesome music taste. Fly me to the moon huh, <3 me some Frank Sinatra! :)

  3. haha - "That's coke, right?" It looked like it, but I was wondering when you were going to say something. Watching it now you must laugh because he was trying to make you notice, but you didn't for a while.
